Our 3rd instalment of competition coffee this season - Available in very limited quantities
This world-class washed Gesha, a rare micro-lot from the remote, biodiverse highlands of Tabaconas in northern Peru, is meticulously produced by Theilor Cruz.
The outstanding complexity of this special lot is highlighted by buttery sweetness and structured floral complexity - the pinnacle of high-altitude 2025 Peruvian coffee.
An expert in producing Gesha exclusively, this coffee is handpicked and carefully sorted before undergoing a meticulous washed process; depulped, fermented, completely washed and slowly dried for 18 days on raised beds.
This is the highest scoring coffee Finca Tabaconas produce and the highest we’ve showcased 90+.
Producer
Theilor Cruz is a young, 2nd generation producer who embodies the ethos of modern specialty coffee with a high level of attention to quality.
Farm
At Finca Tabaconas, his deliberate choice of the Gesha varietal and precision-driven approach to harvesting, processing, and drying, consistently yield extraordinary cups.
Processing
Only the best ripe Gesha cherries are selected and carefully hand‑sorted to remove defects
Depulping
Cherries are mechanically depulped (skin and pulp removed), exposing the mucilage.
Cherries are fermented in water to break down mucilage, then thoroughly washed to remove all residue Washed cherries are then spread on raised beds and sun-dried for about 18 days, using the region’s sunny, cool mountain climate with the preservation of acidity and development of complexity in mind.
