From the multi-award winning team behind Los Nogales, known for their world-class scientific fermentation lab - comes this impressive 190hr Extended Lactic Washed Typica. Compounding the specific RN21 Lacto strain, 190 hours of temperature controlled fermentation as well as precise drying protocols which further reflect the current trend for this style of "precise microbiology engineering” across the industry.  

During extended fermentation, the RN21 lactobacillus consume the sugars in the mucilage and generate lactic acids, ester compounds and a small amount of alcohol or aldehydes with each reaction. These introduce creamy, yogurt-like acidity, aromatic tropical fruits & sweet vanilla florals. 

Oscar follows the traditional washed process, but dramatically extends the fermentation duration and inoculates with a specific bacterial culture creating this signature sweet creamy profile with intriguing tropical fruit complexity and almost transparent clean acidity.
