Bursting with Tropical Fruits this beautiful Pink Bourbon - a rare varietal known for its candy-floral profile that ripens to a unique pink colour, is produced with over 20 years of experience. Luz crafts this 48hr aerobic natural (whole fruit w/ the presence of oxygen) to create beautifully soft layered aromatics. 

Compounded with meticulous processing through selective harvesting, this signature varietal is produced in the acclaimed Quindío region by the experienced & respected Luz Helena Salazar. 

Varietal

Pink bourbon is a rare varietal named after the unique pink colour of the coffee cherry when ripe. Pink Bourbon was previously believed to be a hybrid of red & yellow bourbon varietals, however, recent research is likely to have disproved this theory.

In September, Café Imports published an article stating that after conducting genetic testing with RD2 Vision, Pink Bourbon is likely to have come from an Ethiopian landrace variety - further adding to the curiosity of this varietal.

100% Pink Bourbons are very difficult to produce consistently, though they’ve shown a good resistance to coffee leaf rust, the recessive genes which lead to the expression of the pink colour are easily hampered by the presence of the more dominant Red & Yellow Bourbon genes.

Producer

Luz Helena began her coffee journey more than twenty years ago after listening to her husband, Jairo Arcila, as he spoke about his daily challenges as a coffee farmer and dry mill manager.

She felt that the farm had a capacity for something much better than the commercial coffee it was producing at that time, and set herself to overhauling their farm management in order to improve the cup quality and health of the trees.

Along the way, she also took a meticulous approach to processing, something that her two sons, Carlos and Felipe, have expanded upon with their own coffee business.

With the help of Cofinet, Luz continues to refine her production of specialty coffee with a focus on care and quality. Luz is a pioneering figure in her own right, who has shaped the landscape of Colombian coffee production with her knowledge of soil cultivation and innovative processing techniques.
